Spoilage of oil can be detected by which fatty acid?

  1. Linolenic acid
  2. Erucic acid
  3. Linoleic acid
  4. Oleic acid

Answer

(2) Erucic acid

Solution

As per NCERT, fatty acids are unsaturated (with one or more C=C double bonds) or saturated, and oils are lipids with a low melting point.

∵ Erucic acid ( C21H41COOH, cis-13-docosenoic acid) is a long-chain unsaturated fatty acid present in mustard and rapeseed oils.

⇒ Its content is the marker estimated in testing the quality of edible oil; an abnormal (high) level shows that the oil is spoiled or adulterated and unfit to eat.

∴ Spoilage of oil is detected by erucic acid.
