Given below are two statements : In the light of the above statements, choose the most appropriate answer from the options given below :

  1. Statement I is incorrect but Statement II is correct
  2. Both Statement I and Statement II are incorrect
  3. Both Statement I and Statement II are correct
  4. Statement I is correct but Statement II is incorrect

Answer

(2) Both Statement I and Statement II are incorrect

Solution

Statement I: As per NCERT, proteins (and oligopeptides) are polymers of α-amino acids; hydrolysis of a protein gives a large number of α-amino acids, not β-amino acids. Incorrect.

Statement II: As per NCERT, fibrous proteins (keratin, myosin) are insoluble in water, while globular proteins (insulin, albumins) are water soluble. Denaturation (by heat or change in pH) destroys the 2° and 3° structures and globular proteins coagulate, e.g. coagulation of egg white. The statement wrongly calls the soluble form 'fibrous'. Incorrect.

Both Statement I and Statement II are incorrect.

Answer: (2)
