The initial step in the digestion of milk in humans is carried out by

  1. lipase
  2. trypsin
  3. rennin
  4. pepsin.

Answer

(3) rennin

Solution

As per NCERT, rennin is a proteolytic enzyme found in the gastric juice of infants which helps in the digestion of milk proteins.

⇒ Rennin acts on the milk protein casein and converts it into insoluble paracasein (curdling of milk) in the stomach.

∴ This curdling is the first step in the digestion of milk; the curdled protein is then acted upon by pepsin.
